Quinoa Veggie Breakfast Muffins

Chock full of the wholesome goodness of quinoa and veggies, these breakfast muffins are perfectly portable and delicious!

Ingredients

  • 6 eggs
  • 2 cups cooked quinoa
  • 2/3 cup chopped onion
  • 2/3 cup chopped red pepper
  • 2/3 cup grated zucchini unpeeled
  • 2/3 cup chopped fresh mushrooms
  • 2/3 cup feta cheese
  • 1 tsp thyme
  • 1 tsp salt
  • 1/2 tsp black pepper

Instructions

  1. Preheat oven to 400F
  2. Spray muffin tin with non stick spray
  3. In a large bowl beat eggs, then add the remaining ingredients.
  4. Pour into muffin cups.
  5. Bake 25 minutes, or until edges are brown
