Today is one of those “comfort food” kind of days. I don’t know why, but I was in the mood for this…
I know. It looks like your standard grilled cheese sandwich. But, it’s not. It is SO much better.
It is a grilled soynut butter (peanut butter replacement) and jelly sandwich.
I first learned about this delicacy from my mother-in-law. My father-in-law is a no-frills sort of guy. He isn’t fussy, and generally doesn’t complain. He doesn’t fuss (much) about the meals that are prepared by his wife. That I know of, there has been one exception to that rule in their nearly forty year marriage.
One day, Barb made a PB&J sandwich for Richard. When she presented it to him, he pretty much said, “Thanks, but no thanks. You made it wrong.” I don’t KNOW if those were his exact words, but you get the gist. And of course, Barb thought, “How can you make a PB&J wrong?” I would have thought the same thing. Of course, not being as mild mannered as my mother-in-law, I probably would have told him to go fix his own darn sandwich. But, rather than stir the pot of conflict, she asked him what was wrong with it.
Wait a minute.
Yep. Apparently, his Mom had always served his PB&J sandwiches grilled.
So, now she serves his PB&J sandwiches grilled.
Of course, we can’t have peanut butter in the house, so we use WOWBUTTER. WOWBUTTER is a peanut butter replacement. The ingredients in WOWBUTTER are simple… Non Gmo Pure Canadian Toasted SOY, Soy Oil, Granulated Cane Sugar, Monoglycerides (from vegetable oil to prevent oil separation), Sea salt. Yep, that’s it.
We’ve been using WOWBUTTER for over two years, since Mister was diagnosed as peanut allergic. And the grilled SB&J’s are now one of my comfort foods. They are simple to make. Just make an SB&J (or PB&J) sandwich like you normally would, butter both sides, and grill like a grilled cheese sandwich.
OMY! As in, Oh My Yum!
I don’t have them often (and I will eat mine un-grilled) but today was just one of those days!

Pot roast. The slowed cooked, falling apart beef with potatoes, carrots and gravy. OMY, indeed!

Well, it seems as though ALL food is my comfort food. LOL! But, if I have to choose I guess it would be peanut butter and banana sandwiches and milk, grill cheese and bacon, OR sausage, egg and cheese biscuit. LOL. Of course I would have to have guacamole salad on the side! LOL! See? I told you I just like FOOD! LOL!

I have a sweet tooth so anything sweet. My favorite is ice cream!
