Strawberry Avocado Chopped Turkey Salad

So, yesterday I was stumped as to what to make for dinner.  I had fresh strawberries, fresh avocado, and a few different types of lunchmeat.  I was in the mood for something different.  So, I created my own treat.

Strawberry Avocado Chopped Turkey Salad

Ingredients

  • 10 fresh strawberries, hulled and chopped
  • 1 avocado- pitted and chopped into small pieces
  • 9 oz. package of deli thin sliced mesquite turkey breast, chopped
  • 1/2 cup mayonnaise

Instructions

  1. Rinse, hull, and chop strawberries
  2. Remove avocado pit and chop avocado into small pieces
  3. Chop deli turkey breast into small pieces
  4. Combine chopped strawberries, avocado, and turkey in small bowl with half cup mayonnaise and mix using a large spoon.
  5. Serve on hoagie rolls or by itself and enjoy.

Notes

Pairs well with sandwich night sides like chips and/or cottage cheese.

We had ours with chips and cottage cheese.

My husband is generally not a fan of avocado, so when I asked him if he would eat what I was thinking about making, he said, “Are you going to go heavy on the avocado?”  After eating his Strawberry Avocado Turkey Treat, he asked, “Can we have this for dinner tomorrow?”  Woot!  I made a tasty meal AND got out of cooking for dinner tonight.
