I mentioned that I recently discovered quinoa and really like it. I found a bunch of delicious quinoa recipes that I’ve enjoyed trying. I’ve also played around quite a bit, made a few dishes that I hated, and a few that I loved.

To say that we like breakfast foods in our house would be an understatement. These delicious quinoa veggie breakfast muffins are great because combine the goodness of quinoa with veggies and eggs, and because they are perfectly portable even the pickiest eaters will try them.
Of course, if you have super picky eaters, you can swap out the veggies for ones that blend with the color of the quinoa and eggs or swap out the feta cheese for a milder cheese. Seriously, though, you want to try them like this first!

Quinoa Veggie Breakfast Muffins
Ingredients
- 6 eggs
- 2 cups cooked quinoa
- 2/3 cup chopped onion
- 2/3 cup chopped red pepper
- 2/3 cup grated zucchini unpeeled
- 2/3 cup chopped fresh mushrooms
- 2/3 cup feta cheese
- 1 tsp thyme
- 1 tsp salt
- 1/2 tsp black pepper
Instructions

Preheat oven to 400F

Spray muffin tin with non stick spray

In a large bowl beat eggs, then add the remaining ingredients.

Pour into muffin cups.

Bake 25 minutes, or until edges are brown
