I’ve eaten, and even purchased, gluten free foods before without really paying any attention to it. No one in my family requires a GF diet. However, with Mister having the peanut allergy, a lot of times when I look for things that are nut free, I end up with something that is also gluten free.
We recently had bagel sandwiches for dinner, and I asked Hubs to pick up the bagels. He brought home Udi’s Plain Bagels. Perfect.
I tossed together leftover chicken, precooked bacon, and colby-pepper jack slices and popped them in the toaster oven to toast.
They turned out SO nicely!

I love that the Udi’s bagels toasted perfectly, slightly chewy on the outside yet soft on the inside, and will be buying them for our next bagel night. I don’t typically do spicy things, but decided to try something new with the Colby-Pepperjack cheese, and boy am I glad I did! It had just enough zing to make it delicious, but not so much as to set my mouth on fire!
