Protein Packed Scramble

As you all know, I have lost sixty some odd pounds.  In the process of losing weight, I have discovered that one of the things that is absolutely essential to curbing cravings throughout the day is a protein packed breakfast.

Short of drinking a protein shake every morning (which some mornings I do, just to save time and energy), I’ve had to come up with some creative ways to protein load my breakfast.  One of my current favorites is a protein packed scramble.   I keep veggies cut up in the fridge, which makes this delicious breakfast a snap to make.

Protein Packed Scramble

Cook Time: 10 minutes

Total Time: 15 minutes

Protein Packed Scramble

This protein packed scramble is the perfect way to start your day.

***Also excellent with a slice of American Cheese or with other vegetable mix-ins. I really enjoy sauteed mushrooms and onions, as well.***

Ingredients

  • 3/4 cup Fat Free Egg Beaters
  • 1/8 cup onion slices (I used Vidalia)
  • 1/8 cup broccoli florettes
  • 1/8 cup bell pepper slices
  • 5 cherry tomatoes, halved
  • Non-stick cooking spray

Instructions

  • Spray saute pan with non-stick cooking spray and add vegetables over medium heat.
  • Saute vegetables until onions are slightly tender.
  • Add Fat Free Egg Beaters and cook through.

Tyson Breakfast Bread Bowls for Dinner

We eat breakfast for dinner at least once a month, if not more often.  Breakfast is one of our favorite meals.  We typically go all out and have eggs, sausage, biscuits… the works.  There are times, though, that I need breakfast for dinner to be SO. MUCH. QUICKER. than all of that.

I was recently on my weekly Thursday Sam’s Club shopping run with my two little helpers.  Aren’t they cute?#CBias #TysonBreakfast 07

While shopping for frozen fruit (for smoothies) I saw something I knew I wanted to try… Tyson Breakfast Bread Bowls.  I snapped a picture with my phone and sent it to my husband, with the question “Breakfast for Dinner?”  I figured at less than $10, it would make a cheap dinner for all of us, and I wouldn’t have to add much to it.  #TysonBreakfast

Hubs was agreeable, so in the cart they went with the milk and produce.  I was excited to try them.  Even more excited that they are microwavable and would reduce dinner prep time substantially, which was great since breakfast for dinner was on the menu for a Monday evening.  I volunteer at a food pantry on Monday’s, and like to keep dinners simple and easy, because I am typically exhausted by the time dinner rolls around.

I’ve used Tyson chicken products in the past, and have always been pleased with the results.  I didn’t realize, though, that they were in the breakfast business before seeing the  #TysonBreakfast Bread Bowls.

After grabbing a few more items, I went through checkout, then out to load the van.  I travel with a cooler on grocery shopping days, since I often have items that need to be kept chilled and or frozen.

The hardest part?  Waiting until Monday to have them for dinner!  I wanted to try them right away!

Soon enough, Monday arrived, and it was Tyson Breakfast Bread Bowls, hash brown patties, and fresh fruit for dinner.

Hubs and I really enjoyed ours.  The kids?  Let’s just say new foods often have to be served more than once before they are won over.  But won over they were.  When I purchased them, my Sam’s Club only had the sausage, egg, and cheese variety.  Now they also offer the bacon, egg, and cheese.  I can’t wait to try those!  These WILL be on the menu again!
