Twenty days ago, on Groundhog Day,  Punxsutawney Phil spotted his shadow at Gobbler’s Knob in Pennsylvania and said we should prepare for six more weeks of winter weather…

We are breaking out the bubbles, sidewalk chalk, digging tools, and light jackets.  I think I will hold off on planting any new flower bulbs or seeds, but as you can see in the pictures, my Daffodils are starting to come up.  Woot!  I‘ll be seeing color soon!

Liberating My Health #nourishwhatcounts

As I mentioned in my previous Quaker Hearth Health Challenge post, I recently joined the MapMyFitness Quaker Challenge. After I injured my knee last year, I sort of gave up on my quest for fitness. The last seven months have been fraught with joint pain and frustration. When it hurts to move, you tend to not do it. KWIM? I had made it down to 163.5 pounds, and then climbed back up to 195. It hurts to put that out there. To admit that kind of defeat.

I joined the MapMyFitness challenge because I knew I had to start moving again. Regardless of how much it hurts. Immobility atrophies more than just muscle… it atrophies the will. So, I got off the couch and started moving. Yesterday, I received some answers I have been waiting for, when I was finally able to see the orthopedic surgeon. Fortunately, I do NOT have to undergo the knife. My x-rays were good. There is good space between my joints, and no spurs or what not.

Unfortunately, I was not given a clean bill of knee health. My diagnosis? Benign Joint Hypermobility Syndrome (also incorrectly called “double jointedness). BJHS essentially means that the ligaments in my joints stretch farther than is normal, placing me at higher risk for injury, joint instability, and early onset osteoarthritis (I was diagnosed with degenerative disc disease at the ripe old age of 21). As the Ortho was doing the Beighton score assessment, in which he tested the elasticity of several joints, it clicked and SO many other things (sublux’d hips, shoulder dislocation, my weird ability to bend thumbs backward to my forearm) began to make sense.

The doctor basically said that it is imperative that I get in shape (which I am working toward) and stay in shape. Essentially, my muscles have to be able to compensate for the laxity in the ligaments, so the fitter I am, the less problems I *should* have with the BJHS.

Now, I have even more reason to get fit. My hearth health is important to me, and so is my joint health! While I am only getting about 6000 steps a day right now before my knee gives out, it is better than the 4000 steps a day I was getting. Slow and steady wins the race, right? Speaking of slow and steady… since my last post, I have lost two pounds, bringing my weight back down to 183 pounds. Twelve pounds lost this year. The Ortho seems to think I should be back on the elliptical by the fourth or fifth physical therapy visit. Without exercise (just with my calorie counting) I am slated to reach my goal weight on July 4th… Independence Day baby! I think it apropos that I should make goal by a day that celebrates Freedom! Oh yah!

Low-Cal Oatmeal Bars

I was playing around in the kitchen, and decided to make oatmeal bars. I’ve never made oatmeal bars, but I figured it couldn’t be much different than oatmeal cookies, right? Except you throw more stuff in. So, I started with a basic oatmeal raisin cookie recipe, switched the raisins for cranberries, and started adding stuff. Here’s the final recipe

Cranberry Apple Zucchini Carrot Oatmeal Bars

Prep Time: 15 minutes

Cook Time: 30 minutes

Total Time: 45 minutes

Yield: 48 pieces

Calories per serving: 51

Fat per serving: 2.4

Ingredients

  • 3 cups old fashioned oats (NOT the quick cook oats)
  • 1/2 cup sifted all purpose flour
  • 1/2 cup Splenda
  • 1/2 teaspoon salt
  • 1 teaspoon baking powder
  • 1 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • 1 egg
  • 1 teaspoon vanilla
  • 1/2 cup salted butter, melted
  • 3 tablespoons water
  • 1/2 cup dried cranberries
  • 2 cups shredded carrot
  • 1 raw apple, cored and sliced
  • 1 raw zucchini, cut in chunks

Instructions

  • Heat oven to 350F.
  • Spray 13x18x1 inch cookie sheet with non-stick cooking spray and set aside.
  • Placed apple and zucchini in food processor and pulse until chopped well. Add shredded carrot and dried cranberries and mix well. Set aside.
  • Into stand mixer bowl, sift together flour, Splenda, salt, baking powder, cinnamon, and nutmeg.
  • Add oats, and stir until well blended.
  • In separate bowl, combine egg, water, melted butter, and vanilla.
  • Add carrot zucchini apple mixture to dry mix and, with bowl locked in place, begin mixing on low. Slowly add egg mixture.
  • Spread mixture into pre-sprayed cookie sheet.
  • Bake at 350F for 30-35 minutes, until edges and top are slightly crispy.
  • Cool for 10 minutes before slicing into 48 pieces.

The best part is, Mister likes them, too.  And he protests all things green!

Shooting Hoops

“Mom, can we go out front and play basketball?” Mister asks. 

“Sure, let’s go.” 

So, we grab our coats and head outside.  We have a kids basketball goal set up on the sidewalk, and as recently as a few months ago, both of my kids really liked it.  So, I grab the little D&B ball we usually use for it, and head around the house. 

Apparently, that hoop just isn’t cool enough anymore. 

“Those kind of basketball goals are for babies and little kids, Mom,” Mister says with a note of disdain in his voice.  “Big kids don’t use that kind!  And since I’m four, I am a big kid.  So, I am not using it.”

Okay, Mister Opinionated, I think.  Isn’t it funny, how kids can love something one minute, and the next minute they’ve outgrown it?

So, I grab the big basketball, and walk around to the “big kid basketball goal.”

I guess it’s a good thing Hubs spent some time shopping for a bigger basketball hoop last year.  Hubs enjoys shooting hoops, as do the rest of us.   He searched online, and talked to a few neighbors, and decided we should get one of the adjustable hoops.  There are at least two other adjustable hoops on our block, and they have held up well with the St. Louis weather.  In fact, one of them has been there since Hubs bought the house, over seven years ago.  So we are hoping ours will last us until the kids are in high school.

Fortunately, that means Mister’s got plenty of time to work on that lay up!

Mister Logic- Cumbersome

For Valentine’s Day, I gave Mister and Sister the WordWorld- Rocket to the Moon DVD.  image

We picked it up while shopping one day (I was coerced) but I told them they had to wait until Valentine’s to open it. 

So, this morning, I popped it in for them. 

After watching part of the DVD, Mister comes over to me and we have the following conversation…

Mister: "What does cumbersome mean?"
Me: "That something is difficult to handle"
Mister: "And heavy, right?  It’s cumbersome because it’s heavy.  Like a big rocket ship is cumbersome, because it is heavy, right?"

Right.

I’ll get out the dictionary before answering anymore questions, so that I can be sure to use the entire definition, lest Mister think Frog is smarter than Mommy.
